Coffee beans, coffee grounds and brewed coffee are not just for hot and cold drinks. This recipe uses both brewed and freshly ground coffee for a unique twist on a cinnamon muffin.
Ingredients
Muffins
1 2/3 cups all-purpose flour
1/2 cup granulated sugar
1 Tbsp baking powder
2 eggs
4 Tbsp brewed Bosco's Signature Blend coffee
3 Tbsp milk
1/3 cup canola oil
Streusel Topping
2 Tbsp brown sugar
1 Tbsp ground Bosco's Signature Blend coffee
1 Tsp cinnamon
Directions
Preheat oven to 350 degrees.
Mix eggs, milk, brewed coffee and canola oil in a small bowl and whisk
In a large bowl, add flour, granulated sugar, and baking powder together
Add wet ingredients to the large bowl of dry ingredients and mix well
Grease muffin tin and fill with muffin mix 1/2 way for small muffins and level to the top for larger muffins (larger muffins shown in the picture above)
Sprinkle streusel over muffin batter to taste
Bake in the oven for 20-25 mins (use a cake tester to ensure finished)
